The Role

The Executive Sous Chef plays a pivotal role within the Food & Beverage operations of this prestigious 5-star hotel, serving as the vital link between the Executive Chef and the broader kitchen team. With exceptional leadership and management skills, you will support the Executive Chef in maintaining the high standards expected across all areas of the hotel—including multiple dining outlets, function spaces, and in-room dining services. You will bring a strong background in luxury hotel environments, either within Australia or internationally, and have proven experience in managing, coaching, and leading a large team of chefs. A refined approach to fine dining, combined with advanced culinary skills and extensive experience in high-volume banqueting and multi-outlet operations, is essential. Your focus will be on the seamless execution of all kitchen operations, ensuring that only the highest quality dishes are served throughout this award-winning venue.

Skills and Experience

The successful candidate will be expected to possess, but not be limited to, the following attributes:

• Proven ability to perform at a high level in fast-paced, high-volume environments
• Strong time management skills and the ability to work effectively under pressure within a 5-star hotel setting
• Exceptional business acumen and administrative capabilities relevant to hotel operations
• Excellent leadership and communication skills, with a collaborative approach, positive attitude, and strong work ethic
• Relevant qualifications in Commercial Cookery, as well as certifications in food safety and hygiene
