Catering Project Melbourne is seeking an experienced Head Chef to join our team in Albert Park, VIC 3206.

As the Head Chef, you will work with the Executive Chef of Victoria to lead culinary requirements for a multifaceted operation across Melbourne Sporting and Aquatics Centre and Lakeside Stadium. This operation includes Sir Albert Cafe, event day kiosk outlets, catering, and events.

This is an exciting opportunity for an organized individual looking to take on a venue where no two days are the same.

With a primary focus on a 7-day-a-week cafe operation, this is a "hands-on" position requiring flexibility as each day's activities vary.

Responsibilities:

  1. Oversee all food operations, paying particular attention to every stage of the production process.
  2. Manage freshness, quality, and ensure all products are delivered as per SOP.
  3. Ensure consistency across all products.
  4. Manage processes, SOPs, and on-the-job training across the kitchen team.
  5. Implement Quality Assurance measures.
  6. Manage HACCP processes and checks.
  7. Control food and production labour costs.
  8. Receive customer feedback and work with operations to implement corrective actions.
  9. Manage rosters effectively to meet demands and budgets.
  10. Promote a safe work culture and ensure compliance with HACCP and WHS regulations.

What we're looking for:

  • Minimum 2 years' experience as a Head Chef.
  • Experience in plated meals and canapes.
  • Strong attention to detail and commitment to high-quality food.
  • Excellent time management and organizational skills.
  • Flexibility and ability to work in a fast-paced, dynamic environment.
  • Solid knowledge of food safety and hygiene systems, with preferred knowledge of HACCP processes.
  • Availability to work on weekends and occasional nights as required.
