W Sydney, opening in Darling Harbour in October 2023, is now casting for an Assistant Director of Beverage and Food to assist in leading the Beverage and Food operation that includes restaurant, bars, room service and banqueting.

The position oversees the development and implementation of department strategies and ensures the implementation of the brand service strategy and brand initiatives.


The Assistant Director of Beverage & Food's primary responsibility includes launching and establishing the unique Beverage and Food Concepts while building a strong B&F leadership to execute the strategy of the department.

Collaborating with the Director of Beverage and Food, this integral role will work closely with B&F leadership team to create unique and vibrant beverage experiences across the different venues in the hotel.

JOB SUMMARY
Assists in leading the property's beverage and food operation, including Restaurants/Bars, Room Service, and Banquets/Catering, where applicable. You will be responsible for the short
- and long-term planning and the day-to-day operations of all B&F outlets, ensuring the high-level service required for each venue outlet follows according to the W brand standards and the original Concept. The position ensures the beverage and food operations meets the brand's target customer needs, ensures talent satisfaction, focuses on growing revenue, and maximizes the financial performance of the department. Delivers products and services to meet or exceed the needs and expectations of the brand's target customer and property talent and provides a return on investment.

CANDIDATE PROFILE

Education and Experience

  • High school diploma or GED; minimum 2 years' experience in a similar role in luxury hotels/resorts
OR

  • 2year degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration, or related major; minimum 2 years' experience in a similar role in luxury hotels/resorts

CORE WORK ACTIVITIES

Developing and Executing Beverage and Food Strategy and Goals

  • Works with direct reports to develop and implement promotions, beverage and food pairings, menu items and presentation.
  • Develops a beverage and food operating strategy that is aligned with the brand's business strategy and leads its execution.
  • Ensures integration of departmental goals in game plans.

Leading Beverage and Food Teams

  • Ensures that regular, ongoing communication occurs in all areas of beverage and food (e.g., premeal what's up and talent meetings).
  • Works with direct reports to review business in house and potential business in surrounding area and troubleshoot potential challenges/conflicts.

  • Reviews talent levels to ensure that guest service and operational needs are met.
  • Sets expectations and holds beverage and food leadership team accountable for demonstrating desired service behaviors.
  • Provides feedback to talent based on observation of service behaviors.
  • Utilizes talent feedback and an "open door" policy to identify and address talent problems or concerns in a timely manner.
  • Communicates critical information gained from pre
- and post-convention meetings to areas of responsibility.

  • Estimate food, liquor, wine, and other beverage consumption to anticipate amounts to be purchased or requisitioned.
  • Order and purchase equipment and supplies as per operational requirements.

Maximizing Beverage and Food Revenue

  • Reviews financial reports and statements to determine how the department is performing against budget.
