About the role
You’ll be responsible for running a premium French dining experience in one of Sydney’s busiest visitor precincts. Reporting to the Area/Regional Manager, you’ll lead the team to deliver consistent service, strong guest satisfaction, and solid financial results—while maintaining brand standards across every shift.

What you’ll do
- Lead day-to-day restaurant operations to ensure smooth service delivery and consistent quality
- Set and coach staff to uphold customer service standards and hospitality behaviours
- Own staff training and ongoing performance development (onboarding, service coaching, compliance, and skill progression)
- Drive menu planning in line with brand direction, seasonality, and availability
- Manage wine pairing execution (training, service flow, and guest recommendations)
- Ensure the team delivers a confident, premium guest experience—especially during peak periods
- Oversee scheduling, rostering, and labour productivity to meet targets
- Partner with the kitchen to maintain execution standards and support a high-performing service culture
- Handle guest issues professionally, resolve escalations, and protect brand reputation
- Support stock control, purchasing processes, and key operational reporting for the chain
- One Hat premium-level restaurant experience (must demonstrate strong leadership and service excellence)
- Proven experience as a Restaurant Manager / General Manager in a full-service restaurant environment
- Strong capability across staff training, menu planning, wine pairing, and customer service standards
- Deep understanding of operating in a busy, tourism-driven environment (high volume, changing demands, peak-time intensity)
- A clear track record of coaching teams and improving service consistency
- Professional communication, strong decision-making, and a hands-on leadership style
