Zi Bros Restaurant and Bar is currently seeking a full-time Sous Chef to join their team and would welcome anyone with appropriate skills and experience who is willing to commit to a long-term appointment.

To be successful, you will need to possess a relevant qualification and at least 3 years’ experience managing a small, but busy commercial kitchen. This is a great opportunity for someone who has a passion for Sicilian food and all that it embodies including family, soul and sunshine.

Specific duties will include:

1. Ensure that mise en plus is freshly prepared each day

2. Ensure meals are prepared according to required standards and in a timely manner

3. Assist in sourcing local food suppliers taking advantage of seasonal trends

4. Maintain adequate kitchen supplies and ensure that stock is rotated to ensure freshness

5. Prepare daily pastry / breads / pasta according to menu requirements

6. Ensure food wastage is minimised through optimised menu planning

7. Ensure that all staff adhere to health and safety laws and standard hygiene practices

8. Assist with the development new recipes to be included in the menu

9. Oversee and delegate tasks to junior kitchen staff on a daily basis

10. Train and support junior kitchen staff to develop their skills over the long-term

Hours: 38 hours per week (including weekend shifts)

Remuneration: $70K per annum based on a 38-hour week plus superannuation.
