Srilankan Cuisine Head Cook

Prisma Holding Pty Ltd’s Citrus Restaurant is looking for a full-time Head Cook for their busy Restaurant in Fitzroy North Melbourne.

Annual salary: $70,000 pa plus superannuation

Citrus is a busy restaurant in Fitzroy North serving a wide variety of delicious and traditional Sri Lankan Cuisinedishes and we need a qualified and experienced Head Cook to join our energetic team.

We are looking for a qualified and experienced Head Cook to prepare delicious meals according to our menu. You will cook dishes that will delight our customers with their taste and timely delivery.

An excellent Head cook must be able to follow instructions in cooking and delivering well-prepared meals. You must be precise in moving around the kitchen. Experience in using various ingredients and cooking techniques is important.

Responsibilities:

• Follow food safety requirements
• Set up workstations with all needed ingredients and cooking equipment
• Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat, etc.)
• Food preparation and cooking, also ensuring good presentation by dressing dishes before they are served
• Keep a sanitized and orderly environment in the kitchen
• Ensure all food and other items are stored properly
• Monitor stock and place orders when there are shortages 

Requirements:

• A trade qualification in cookery and ideally at least 3 years plus experience as a cook in a busy kitchen cooking authentic & traditional Sri Lankan cuisine
• Knowledge of the use of traditional Sri Lankan spices is essential.
• Experience of cooking in buffet styled restaurant will be an advantage.
• Experience in using cutting tools, cookware, and bakeware
• Knowledge of various cooking procedures and methods (grilling, baking, boiling, etc.)
• Ability to follow all sanitation procedures
• Ability to work in a team and a good team player
• Excellent communication skills
• Knowledge of Sinhalese will be a definite advantage.
• Energetic ‘can do’ attitude supported by strong interpersonal skills
