Sous Chef

We are looking for an experienced Sous Chef or a Chef de Partie looking to take the next step in their career to join the Kepos Catering Team. Kepos Catering is a gold licensed caterer based in the inner city suburb of Rosebery creating bespoke events for our clients.

Duties to include:

·       Planning menus, estimating food and labour costs, and ordering food supplies

·       Monitoring quality of dishes at all stages of preparation and presentation

·       Discussing food preparation issues with Managers, kitchen and briefing of waiting staff prior to service at an event

·       Demonstrating techniques and advising on cooking procedures

·       Preparing and cooking food

·       Explaining and enforcing hygiene regulations

·       Training staff

·       May freeze and preserve foods as required

Experience required:

·       Minimum 5 years experience

·       Attention to detail as working with premium ingredients for high net worth clients

·       Working on catering events up to 600

·       Butcher experience with meat and seafood

·       Experience working in a hotel banquets department

·       Experience cooking for major events and trade shows for up to 12,000 guests

·       Ability to present a cooking class

·       Preparation and execution of fine dining cuisine for VIP events

·       Front of the House experience as will be required to great guests

·       Creation of 12 course menu tasting

·       Computer skills will be required for this position including knowledge of Photoshop and Lightroom

Annual salary starting from $70,000 + superannuation
