As the flagship hotel for the Mercure brand within Australia we invite you to belong to something bigger. We are a big hotel, looking for some big talent With 517 newly refurbished rooms, 9 conference rooms, and multiple food and beverage outlets, Mercure Sydney is on the look out for a maintenance assistant to uphold the hotel standards. We are and will continue to be, ANYTHING BUT NORMAL.

**Job Description**:
Reporting to the Operations Manager, this role will be responsible for the following:

- Manage Platform 818 Restaurant, Eve's Bar, Room Service, Conferencing & Events to ensure quality and efficient service and standards whilst delivering a memorable guest experience.
- Review and analyse the daily operational needs maintaining beverage, labour, product and expenses on budget.
- Develop, implement and maintain quality standards for all Food and Beverage outlets, including the supervision and direction of the Food and Beverage team.
- Work closely with the Executive Chef and kitchen team to ensure Food and Beverage service is an exceptional guest experience.
- Recruit, manage, train, develop and inspire the Food and Beverage team.

**Qualifications**:

- Minimum 5 years of similar experience, ideally in the hotel industry.
- Demonstrated leadership experience.
- Tertiary qualifications in Business or Hospitality preferred.
- Proven capability in creating a positive and productive work environment
- Excellent understanding of hotel systems and revenue management principles
- Experience writing and interpreting budgets, controlling payroll expenditure and managing the overall revenue and expenses of a department.
- NSW Responsible Service of Alcohol Certificate.
