We are looking for someone with a great work ethic, excellent discipline and who enjoys flavour and sensory experiences.
We are on the lookout for someone special to take charge in our prep kitchen. We have a dedicated and loyal clientele and an incredible goodwill amongst tourists who make our shop a destination and part of their culinary adventures of Melbourne. Your responsibilities include:
- preparation of cooking ingredients by washing and chopping vegetables, cutting meat, buttering bread, grating cheese with a robocoup
- Follow the prep list on prep days
- Measure ingredients and seasoning to be used in cooking
- Prepare simple products on market days such as Reubens, soups, dips & spreads
- Maintain a clean and orderly kitchen by washing dishes, sanitizing surfaces, taking out trash etc. and ensuring all kitchen hands are completing these takes in a timely fashion and ticking the jobs list
- Ensure all food and other items are stored properly
- Comply with FoodSafe guidelines
- Perform other kitchen duties as assigned
- Be confident to serve in shop front on busy weekend shifts
- Label and stock all ingredients on shelves so they can be organized and easily accessible
- Maintaining weekly par levels of all toasties and food items via par lists that are analysed weekly with store supervisor
- Maintaining weekly wastage levels and liaising with senior management on this
- Conduct monthly stock takes of all prep products and ensure accuracy
- Making sure to rotate stock and notify store supervisor of stock to be reordered via weekly/monthly ordering sheets
- Undertake basic cooking duties on market days such as grilling sandwiches
Required skills / experience:
- A current Food Handlers' Certificate
- Knife skills a plus
- Ability to use Microsoft excel and word for costings, wastage reports and checklists
- Previous Kitchen hand experience
- Taking care, pride and enthusiasm in what you do
- Working well in a small team as well as the ability to work to set tick lists, timeframes and standards of product
- Understanding flavour and your palate
- Keeping a clean work station at all times
- Ability to multi task under pressure during service
Working hours / days:
- The standard working week for our kitchen hand is 4-5 days a week, 7.30am - 4.30pm Tues, Wed, Thurs & Sat. Sundays are 8.30am - 3.30pm. Weekend work is essential.
3 month probation period as a casual with set hours before going onto a part-time/full-time role at minimum level 1 Restaurant award.
