Madeleine de Proust is a boutique French patisserie in Melbourne, specialising in madeleines and refined pastries. We collaborate with luxury brands and creative partners, and are known for precision, innovation, and elegance in everything we do.
The Role
We are hiring across levels — from Apprentice through to Junior Sous Pastry Chef. Depending on your experience, we'll tailor the role and responsibilities to fit, offering you the chance to grow in a professional, creative, and supportive environment.
Key Responsibilities
- Daily production of madeleines and pastries: mixing, baking, finishing, and presentation.
- Chocolate and glaze work (tempering, enrobage, ganache, decoration).
- Preparing mise en place and following production schedules.
- Maintaining high consistency in flavour, texture, and presentation.
- Assisting with R&D and seasonal flavour development (for experienced roles).
- Upholding hygiene, food safety, and workstation organisation.
- Supporting and mentoring junior team members (for senior roles).
Requirements
- Passion for pastry and strong attention to detail.
- Professional kitchen experience preferred, but apprentices and fresh graduates are welcome.
- Reliability, punctuality, and ability to work mornings/weekends.
- Full working rights in Australia.
