Join our Ladies & Gentlemen - Junior Sous Chef (Atria)

At The Ritz-Carlton, Melbourne, culinary presentations are a statement of craftsmanship. We are seeking an experienced and passionate Junior Sous Chef (Atria Signature Restaurant) to help co-lead our kitchen team in delivering exceptional dishes for fine dining on a Full-Time basis.

Only candidates with full working rights in Australia will be considered.

What you'll do:

  • Support the Atria Sous Chef in overseeing the kitchen's daily operations
  • Manage, train and guide a large and diverse team, fostering a culture of excellence and collaboration
  • Uphold rigorous food safety, allergen management, and hygiene standards
  • Collaborate cross-functionally with culinary teams to deliver flawless guest experiences
  • Maintain inventory, support cost control and manage high production volumes
  • Participates in department meetings and continually communicates a clear and consistent message regarding the departmental goals to produce desired results
  • Supports and assists with new menus, concepts and promotions for the Restaurant outlets

Who we're looking for:

  • Certificate III or IV in Hospitality
  • Availability to work full-time, across shifts including weekends and public holidays 
  • A confident and capable individual with at least 6 years of post apprentice experience
  • Experience with managing a team - highly regarded 
  • Prior experience in a luxury 5-star hotel or high-end venue operations
  • Experience in working with open fire cooking
  • Deep technical knowledge and creativity
  • Food Safety Knowledge
  • Strong organizational skills, calm under pressure, with a hands-on approach to service
  • A natural trainer and mentor who brings out the best in others
