Responsibilities

  • Leading and managing kitchen operations across the bistro, café, and function spaces
  • Working hands-on as a qualified chef, supporting food preparation and service
  • Overseeing menu planning, food quality, presentation, and portion control
  • Managing food and labour costs, stock control, and supplier relationships
  • Ensuring compliance with food safety, WHS, and OLGR regulations
  • Training, mentoring, and supporting the kitchen team to maintain high standards

Requirements

  • Certificate III in Commercial Cookery (or higher)
  • Experience in senior culinary leadership roles with hands-on kitchen involvement
  • Solid knowledge of food costing, stock management, and compliance regulations
  • Excellent leadership and communication skills with the ability to lead and develop a team
  • Knowledge of clubs, hospitality venues, or similar environments (preferred)
  • Flexibility to work evenings, weekends, and public holidays
