Dutch all-day Café, Bar & Restaurant seeking Head Chef

Mandatory Requirements:

To be considered for this role you must have:

  • Some knowledge of the modern Amsterdam food scene and a willingness to develop this knowledge

  • A minimum of 5 years' experience as a chef in a fast-paced restaurant

  • A focus on consistency and quality with excellent food presentation

  • Experience with stock control (ordering, portion control, minimising wastage, food costing, etc)

  • The ability to organise and inspire a small, dedicated team

About You:

You will ideally either have a number of years' experience in a Head Chef or Senior Sous Chef role or you hold a senior position in a restaurant renowned for delivering excellence and are ready to step up into your first Head Chef role in a supportive environment.

You have a passion for making delicious and attractive food.

You will have experience cooking Northwestern European food and be comfortable with the cooking techniques used in that region (Netherlands, Belgium, France, Germany, Scandinavia).

The Place:

Situated on busy Sydney Road in Brunswick, Mokum is the only dedicated Dutch Café, Bar & Restaurant in Victoria.

Mokum is a sentimental nickname given to the city of Amsterdam and has come to mean 'safe place' with the city of Amsterdam widely considered a place where differences are celebrated, and people have been welcomed from all over the world. The culinary scene in Amsterdam also reflects this diversity.

Our Mokum aims to be a 'safe place' where people from all walks of life are welcomed warmly and made to feel at home, and our menu celebrates traditional Dutch flavours alongside the flavours and dishes from the Surinamese, Indonesian, Antillean, Turkish and Moroccan communities calling Amsterdam home today.

We focus on quality ingredients and make almost everything in-house. This includes roasting our own coffee and making our own cakes and treats. We also pride ourselves on our extensive range of Dutch and Belgian beers, along with an extensive list of local and imported wines and cocktails designed using liqueurs made in-house from spices and flavours commonly used in Dutch desserts.

Our venue seats around 60 guests at any one time with an additional bar area for up-to 10 more guests. We also have a dedicated function space upstairs which can accommodate a further 30-40 guests.

The Job:

We established our venue just over 2 years ago and are now looking for the right person to consolidate our learnings and operations to date and then to take our cuisine & team to the next level.

The Head Chef will be responsible for leading a small, dedicated team to produce consistently good food in a timely fashion and working alongside the Owner to deliver exceptional experiences for our guests.
