Description:
The San Telmo Group is one of Melbourne's premier hospitality Groups, best known for fire-driven cooking and bold, produce-led menus. It began in 2011 with San Telmo, an Argentine parrilla in the CBD, and has since grown into a family of distinctive venues - each with its own identity but all are "united by fire." Across the group, the common thread is cooking over charcoal and open flame, with each venue expressing its own cultural roots - Argentinian (San Telmo), Spanish-leaning Argentinian (Asado), Italian-influenced Argentinian (Palermo), Peruvian (Pastuso), and Japanese (Robata) — while focusing on quality Australian ingredients and memorable, high-energy dining rooms.
As our teams expand, we're seeking Assistant Manager candidates for multiple opportunities within the Group. In the Assistant Manager role, your day-to-day will involve leading the FOH team in one of our restaurants, through the following responsibilities:
Lead & Inspire – Step into a leadership role, make key decisions on shift, resolve challenges, and set the standard for service excellence.
Grow Your Team – Recruit, train and develop FOH staff, run appraisals, and support career growth while managing performance fairly.
Keep Standards High – Ensure the restaurant looks its best, uphold safety and compliance, and take charge in emergencies.
Drive Sales & Experience – Coach your team on upselling, analyse sales trends, and create memorable experiences for guests and VIPs.
Manage the Numbers – Build smart rosters, track labour costs, oversee stock, and protect the business from waste or loss.
Shape the Floor – Optimise reservations and covers, personalise guest experiences, and step in to support bookings when needed.
Work as One – Partner with management, chefs, bar and reservations staff, while sharing insights with Directors and supporting supplier relationships.
Build Culture – Recognise great work, communicate change clearly, lift morale, and create a workplace where people want to stay and grow.
Skills and Experiences:
The ideal candidate will have:
Core requirements: Fluent English (verbal/written); valid ongoing Australian work rights (Citizen or PR candidates only); full time availability for 38-42 hours per week incl evenings & 1/2 days on the weekend; high standard of presentation.
Education & experience: Completed Year 12 (or equivalent), plus 2–3 years as a FOH Supervisor or Assistant Manager in a premium, high-volume restaurant.
Technical capability: POS/reservations systems (Bepoz & SevenRooms ideally); financial control (wages, cost of goods, stocktake variance); stock control; OHS/RSA/food safety compliance; rostering; management reporting; developing FOH line staff & Supervisors.
Soft skills: Strong leadership and accountability; excellent communication; conflict resolution and clear decisions under pressure; highly organised and adaptable; culturally inclusive; collaborative across departments; proactive continuous improvement.
