The Role
As our Food and Beverage Director, you'll oversee the full F&B operation across all Casa Nova venues. You'll be the driver of excellence in service, product quality and team culture, reporting directly to ownership and collaborating closely with Head Chefs, Venue Managers and the marketing team to uphold and grow our brand standards.
Key Responsibilities
- Lead and inspire high-performing teams across all locations, including venue managers, chefs, front-of-house and bar teams
- Maintain consistency and quality of food and beverage offerings with a focus on wood-fired pizza and handmade pasta
- Develop and implement service standards, SOPs and training programs for 5-star guest experiences
- Oversee menu development with chefs to ensure seasonal relevance, innovation and profitability
- Manage supplier relationships, negotiate contracts and ensure cost-effective purchasing
- Monitor venue performance metrics (labour, COGS, wastage, guest feedback) and act to optimise results
- Lead hiring, onboarding and professional development of key F&B staff
- Ensure compliance with health, safety and liquor licensing regulations
- Plan and execute special events, seasonal promotions and menu launches
- Represent Casa Nova Italian's brand values with professionalism, class and charisma
Required Skills & Experience
- Minimum 5 years in senior hospitality leadership, preferably multi-site or upscale dining
- Strong understanding of Italian cuisine and wine
- Demonstrated success in leading teams and improving performance metrics
- Experience managing budgets, P&L, stock and rosters
- Excellent interpersonal and communication skills
- High-level organisational and problem-solving ability
- RSA certified (NSW); Food Safety Supervisor certification highly regarded
- Able to travel regularly between locations
