Cafe Manager - Axil Hawthorn

Axil Coffee Roasters has been at the forefront of Australia's specialty coffee scene since 2011. From our roastery and first cafe in Hawthorn, we've expanded to some of Melbourne's most iconic locations, and we're proud to call 2025 World Barista Champion Jack Simpson part of the Axil family.

We're looking for a Café Manager who are just as obsessed with coffee as we are—an individual who can lead a team, build a community, and elevate the entire coffee experience.

What We're Looking For

This isn't your average café gig. We're searching for a hospitality-first leader—someone who understands the grind (literally and figuratively), gets excited about pressure profiling, and sees a café as both a sensory and social space.

You should have

  • Hands-on experience running a high-volume specialty coffee venue
  • A deep understanding of coffee extraction, workflow, and dialing in

  • Comfort working with high-end gear like:

  • La Marzocco GB5

  • Mazzer Robur S
  • Mahlkonig E65S GBW & EK43S

  • Ubermilk

  • Experience with training and developing baristas, from puck prep to palate development

  • A passion for brunch-style menus that complement great coffee
  • Strong leadership skills and a commitment to service excellence
  • A willingness to lead by example—on bar, on floor, and in the team dynamic

What You'll Be Doing

  • Leading a café team obsessed with quality and consistency
  • Managing daily operations—from service flow to inventory
  • Training staff in Axil's standards of coffee and hospitality
  • Ensuring every shot pulled and every plate served reflects our brand
  • Collaborating with our roasting and training teams to keep pushing the envelope
  • Building and maintaining a positive, specialty-focused café culture
