  • Sales, KPIs & Performance
  • Deliver on KPIs across sales growth, labour management, and cost of goods.
  • Monitor financial performance, analyse reports, and implement strategies to optimise profitability.
  • Lead initiatives that boost sales, guest loyalty, and overall restaurant performance.
  • Operations & Standards
  • Oversee accurate and efficient rostering aligned to budget and business needs.
  • Maintain compliance with food safety, brand, and operational standards.
  • Manage inventory, ordering, and stock control to ensure cost effectiveness.
  • Community & Guest Experience
  • Build strong connections with the local community, positioning Schnitz Balaclava as the restaurant of choice.
  • Ensure every guest enjoys a consistent, memorable, and premium dining experience.
  • Handle guest feedback with professionalism, turning challenges into opportunities.

About You

  • Proven leadership experience in hospitality, QSR, or retail management.
  • Strong business acumen with hands-on experience managing KPIs, labour costs, and cost of goods.
  • Ability to balance strategic thinking with operational detail.
  • Guest-focused, approachable, and passionate about leading high-performing teams.
