We are seeking a skilled and passionate Charcoal Grill Chef / Breakfast chef to prepare and cook dishes using charcoal-based grilling techniques and traditional cooking techniques.

Key Responsibilities:
  • Prepare and cook food over charcoal grills or open flames following restaurant recipes or traditional methods.
  • Prepare and cook breakfast items such as eggs, pancakes, waffles, sausages, steaks and other morning meals.
  • Control charcoal temperature and maintain steady heat for optimal cooking performance.
  • Monitor food preparation and ensure quality, flavour, and presentation meet restaurant standards.
  • Select and prep meats, vegetables, and other grill-friendly ingredients.
  • Ensure proper marination, seasoning, and cooking times for flavour and tenderness.
  • Maintain cleanliness and safety standards around the grill and food prep areas.
  • Inspect and maintain charcoal grills and equipment, ensuring proper ventilation and fuel levels.
  • Work closely with kitchen staff to coordinate timing and plating.
  • Innovate or contribute to menu development focusing on grilled, smoked, or fire-roasted offerings.
  • Follow all health, hygiene, and fire safety regulations strictly.
Requirements:
  • Proven experience as a grill chef, BBQ cook, or similar role involving charcoal cooking.
  • Deep understanding of fire management, smoking techniques, and meat temperatures.
  • Physical stamina and ability to work in high heat conditions.
  • Familiarity with food safety and sanitation guidelines.
  • Strong attention to detail and time management skills.
  • Ability to work independently and as part of a team.
  • Culinary certification or training is a plus, but hands-on experience is highly valued.
  • Proven experience as a Chef or Cook (minimum 2-3 year preferred).
  • Knowledge of food safety and sanitation practices.
  • Ability to work early morning shifts (starting at 7:00 AM).
  • Ability to work late shifts (ending at midnight).
  • Ability to work weekends and public holidays.
  • Strong organizational and time management skills.
  • Ability to work independently and as part of a team.
  • Positive attitude and passion for cooking.
