The Opportunity
We're now looking for an experienced Executive Chef to lead the kitchen for this new opening - a hands-on, confident leader with a strong background in Italian cuisine and deep expertise in pasta-focused menus, who thrives in fast-paced hospitality environments and enjoys building high-performing teams and food-driven cultures.
As Executive Chef, you will be responsible for the overall culinary direction, performance, and standards of the kitchen. From pre-opening menu development through to daily service, you will play a critical role in shaping the food offering, kitchen culture, and long-term success of the venue.
This role is ideal for a chef with a deep understanding ofItalian cuisine, particularly pasta-led menus, and the leadership capability to run a high-performing, well-structured kitchen.
Key responsibilities will include:
- Lead, inspire, and develop a high-performing kitchen team
- Oversee the development and execution of a pasta-focused Italian menu, ensuring quality, consistency, and efficiency
- Manage all kitchen operations to deliver smooth service and exceptional food standards
- Drive food cost control, labour management, stock, and supplier relationships
- Recruit, train, and mentor chefs to MAMAS Dining Group standards
- Ensure compliance with food safety, WH&S, and company policies
- Build a positive, inclusive, and accountable kitchen culture
- Work closely with senior leadership and the Venue Manager to deliver operational and business objectives
What We're Looking For
- Proven experience as an Executive Chef or Head Chef in a fast-paced restaurant environment
- Strong background in Italian cuisine, with extensive experience working with pasta-focused menus and execution
- Ability to design, cost, and deliver menu offerings aligned to the venue's operational model
- A confident, hands-on leader who leads from the front
- Strong organisational, operational, and cost-control skills
- Calm, solutions-focused, and resilient under pressure
- Passionate about food, people, and hospitality
- Flexible to work a rotating roster including nights and weekends
