Hayman's Dean Street Bakery is a family-owned Bakery operating 7 days per week in the heart of Frenchville, Rockhampton. It has been supplying the local community with daily, freshly produced Bakery products at the same location for over 40 years.

Job description:

We are seeking candidates to apply for the position of Pastry Chef to join our production team. The Pastry Chef works within a team for the daily production of cakes, pastries, breads and other seasonal bakery products as required.

The chosen candidate will be working on our bakery located in Frenchville, Rockhampton – 4701 QLD.

Duties and Responsibilities:

As a pastry chef you will be responsible for preparing and baking dough products, bread, pasta, cakes, sweets and similar products. The applicant must be able to work within a team environment and be able to follow instructions to produce daily bakery production requirements.

Some of the tasks are, but not limited to:

· Measure and mix ingredients according to recipes.

· Knead, shape, and mold dough for bread, pastries, and other baked goods.

· Prepare fillings, glazes, and toppings.

· Operate baking equipment such as ovens, mixers, and proofers.

· Monitor baking times and temperatures to ensure proper results.

· Adjust oven settings or ingredients as needed for consistency and quality.

· Test dough and baked goods to verify texture, flavor, and appearance.

· Cool baked items properly before finishing.

· Decorate cakes, pastries, and breads with icing, fondant, or garnishes.

· Clean and sanitize work areas, equipment, and utensils.

· Ensure ovens, mixers, and tools are properly maintained and safe to use.

· Store ingredients properly to maintain freshness and prevent spoilage.

· Ensure compliance with food safety and hygiene regulations.

· Develop or modify recipes for new products.

Education and Previous Experience Required

· Tertiary education in pastry or co-related areas

· Able communicate clearly in English in both reading, writing and speaking

· Able to operate modern bakery equipment - pastry sheeter (Rondo), ovens rotel 2 and tagliavani rack oven, and mixers.

· Previous experience in decorating and finishing of pastries and cakes

Skills Required:

· Able to work with minimal supervision.

· Fault find bakery production issues and rectify if required.

· Able to follow bakery procedures and policies.

· Able to meet production deadlines.

· Able to work in a fast-paced environment and under pressure

Working Arrangements

· Role type: Permanent & Full-time

· Working Hours – 38 hours per week

· Monday to Friday – 8 hours per day from 9am to 5pm

· Salary – AUD $77,000 plus superannuation per annum

· Pay Cycle – Wages are deposited weekly into the nominated bank account

Currently living in the Rockhampton region and have the ability to commence work immediately
