• Expected salary: $75,000 - $80,000 per year

Chef Duties:

• Develop and refine authentic North and South Indian vegetarian recipes, such as Dosa varieties, Curries (Paneer Butter Masala, Veg Kolhapuri), and Thali sets.

• Innovate seasonal or promotional dishes (e.g., fusion-style dosas or Indo-Chinese additions like Paneer Manchurian).

• Ensure all dishes reflect traditional Indian flavors while maintaining Sankalp's brand standards.

• Train cooks on plating standards for each menu item (e.g., how to present Dosa with chutneys and sambar).

• Taste and adjust each batch of gravies and spice blends (e.g., sambar, makhani, chettinad) before service to maintain flavor integrity.

• Monitor preparation of allergy-friendly, vegan, or Jain-compliant meals according to guest instructions.

• Prevent cross-contamination between dairy, gluten, and nut-based items.

• Check daily delivery of ingredients such as lentils, paneer, spices, and fresh herbs for freshness and authenticity.

Cook Duties:

• Prepare ingredients for service, including chopping vegetables, grinding masalas, and portioning items like paneer and lentils.

• Cook popular South Indian dishes like Masala Dosa, Sambar, Idli, Vada, and Upma following standard recipes.

• Prepare North Indian vegetarian curries (e.g., Palak Paneer, Dal Makhani, Kadai Veg) under supervision, using proper spice ratios and cooking methods.

• Cook tandoori starters such as Paneer Tikka or Tandoori Mushroom using tandoor ovens.

• Use flat grill to prepare dishes like Dosa and Pav Bhaji efficiently and evenly.

• Ensure food is cooked thoroughly, correctly spiced, and consistent in portion and quality.

• Maintain a clean and sanitary work environment, including cooking stations and utensils.

• Coordinate with chefs and service staff to ensure timely preparation of orders.

• Prepare meals as per special dietary requirements (vegan, Jain, gluten-free), under chef guidance.
