Job Title: Chef

Location: Red Lion Hotel, 43–45 Sydney Street, Kilmore VIC 3764

Reports to: Head Chef / Venue Manager

Employment Type: Full-time

Position Summary:

The Chef at the Red Lion Hotel Kilmore plays a key leadership role in the kitchen, supporting the Head Chef in managing daily operations, supervising staff, and ensuring that all meals are prepared to the highest standard. The Chef is responsible for maintaining consistency, foodquality, and hygiene standards, while assisting in menu development, stock control, and staff training.

Key Responsibilities:


• Support the Head Chef in overseeing the day-to-day operations of the kitchen,ensuring efficient and effective service.


• Supervise and coordinate the kitchen team to maintain a high standard of foodpreparation, presentation, and service.


• Prepare, cook, and present dishes to Red Lion Hotel standards.


• Assist in planning, developing, and implementing seasonal menus and daily specials.


• Ensure all food is prepared in accordance with food safety and hygiene regulations.


• Manage and train kitchen staff, ensuring a positive and productive work environment.


• Oversee mise en place, stock rotation, and portion control to minimize waste.


• Monitor stock levels, assist with ordering, and ensure accurate inventory control.


• Take responsibility for kitchen operations in the absence of the Head Chef.


• Contribute to maintaining a safe and clean working environment, ensuringcompliance with all WHS policies and HACCP guidelines.


• Assist in cost control, budgeting, and achieving profitability targets.


• Collaborate closely with front-of-house staff to ensure smooth communicationand customer satisfaction.

Qualifications and Experience:


• Certificate IV in Commercial Cookery (or equivalent qualification).


• Minimum 1 years' experience in a similar role within a busy pub, hotel, or restaurant kitchen.


• Strong leadership and team management skills.


• Excellent knowledge of modern and traditional cooking techniques.


• Sound understanding of food safety standards and kitchen operations.


• Ability to work efficiently under pressure and maintain high attention to detail.


• Effective communication and interpersonal skills.


• Passion for food quality, creativity, and consistency.
