Real Dairy Australia (RDA) is an Australian owned business with locations and manufacturing facilities throughout Australia (Queensland, NSW, Victoria) with the head office located at Greenacre. RDA is a world class supplier of dairy-based products, services and solutions to the retail, foodservice and food ingredients markets.

We are seeking an experienced and passionate Cheese Maker to join our growing dairy facility based in Wauchope. This is a hands-on production role where you will take responsibility for producing high-quality cheeses and ensuring that every stage of the process meets our standards of excellence.

Key Responsibilities:

• Produce a range of cheeses to specification and schedule.
• Manage the cheesemaking process from milk treatment through to maturation.
• Monitor quality, consistency, and yield throughout production.
• Maintain food safety, hygiene, and compliance with industry regulations.
• Assist in developing new cheese products and process improvements.
• Work collaboratively with the production team to meet output and quality targets.

About You:

• Previous experience in cheesemaking or dairy production (essential).
• Strong technical knowledge of milk, cultures, enzymes, and ageing processes.
• Hands-on, detail-focused, and committed to quality.
• Strong understanding of food safety and HACCP compliance.
• Reliable, organised, and able to work as part of a small team.
