Itinerant Spirits is a distillery-led cocktail bar and restaurant located inside a beautifully reimagined heritage Goods Shed in the heart of Ballarat - right next to the station. We craft small-batch whiskey, gin and vodka, and serve them in an atmosphere that blends grit, curiosity, and refined hospitality. Our venue attracts locals, travellers, and spirit lovers alike.


The Opportunity

We're on the hunt for a passionate and experienced Bar Manager to take the reins of our bar operation. This is a full-time leadership role, responsible for overseeing all aspects of the bar, from team training and cocktail development to stock control and customer experience.

What You'll Do

  • Lead a team of bartenders and bar staff to deliver consistently excellent service
  • Develop innovative, seasonal cocktail menus in collaboration with our distillers
  • Manage bar operations, including stock ordering, inventory, and cost control
  • Maintain compliance, cleanliness, and safety standards
  • Work closely with the kitchen, front of house, and events teams to create a seamless guest experience
  • Deliver training, mentorship and strong leadership to build a high-performing team
  • Monitor bar profitability, KPIs and labour efficiency

About You

  • Previous experience managing a busy bar, cocktail venue, or hospitality operation
  • Expert knowledge of spirits and cocktails, with a creative edge
  • Leadership skills with a hands-on, lead-by-example approach
  • Strong understanding of stock control, ordering systems, and bar costings
  • Comfortable working evenings and weekends as required
  • Current RSA and understanding of Victorian liquor licensing laws
  • A love for hospitality and a drive to deliver memorable customer experiences
