Celebrating Massimo Mele's heritage, Peppina borrows his nonna's namesake and gives modern Italian cuisine a local Tasmanian twist. The menu will have a produce-driven philosophy - simple, uncomplicated and seasonally changing, using quality ingredients where the local produce is the hero and delivered with authenticity. 

The Opportunity  

Join our exceptional team as a Head Sommelier and become an integral part of our international family. If you have a deep passion for wine, this is the opportunity for you. As a Head Sommelier, your main responsibilities include serving wine and champagne, offering expertise on origin, vintage, and styles, managing the wine list and MICROS system, and suggesting wine pairings for our menu items. You'll attend tastings, build vendor relationships, request new products, and create enticing wine lists and promotions. Your role also involves monitoring and maintaining the wine cellar, training staff, ensuring compliance with alcohol service laws, and maintaining inventory. About You 

• Proven experience working as a Sommelier or in a similar role within fine dining restaurants or luxury hotels.
• Genuine passion for food and beverage, with strong knowledge of wines and spirits; sustainability awareness highly regarded.
• Ability to anticipate and respond to guest preferences, creating a memorable and personalized drinking experience.
• Strong work ethic with exceptional customer service skills and a commitment to excellence.
• Impeccable personal presentation and meticulous attention to detail.
• Valid Responsible Service of Alcohol (RSA) certificate.
• Wine and Spirit Education Trust (WSET) or Court of Master Sommeliers certification is highly desirable.
• Full working rights in Australia.
• Flexibility to work days, evenings, weekends, and public holidays.
