The role
We're seeking a hands-on Sommelier to lead and grow a dynamic, ever-evolving wine program.
You will
- Maintain and contribute to a diverse list with a focus on quality, value and discovery (by-the-glass, magnums, cellaring and seasonal edits).
 - Developing and maintaining our strong beverage culture – with your energy and creative input encouraged.
 - Be a daily sales presence across bar, bistro and private dining; lift upselling and average spend.
 - Train and mentor the FOH team; deliver monthly tastings and supplier sessions.
 - Contribute to beverage GP, stock, ordering and month-end; track waste and implement tight cash-up/variance controls.
 - Plan and execute events and activations in step with Trader House sommeliers and key suppliers.
 
What you'll bring
- Proven floor sommelier experience in quality venues; strong Australian and international knowledge.
 - You genuinely love the thrill of a busy restaurant and love to create remarkable experiences for guests.
 - You understand the commercial contribution of the beverage program and the levers that ultimately drive its success .
 - You are knowledgeable and can comfortably guide guests through the great wines, vineyards and regions of the world
 - You are a service-driven sommelier with an eye for detail whose passion and charming service offers an exceptional experience to our guests
 - WSET 2/3 (or equivalent) preferred; curiosity essential.
