Using stone-deck ovens, long fermentation methods, and hand-moulding techniques, we produce authentic Turkish breads and an expanding range of pastries such as brioche loaves, croissants and fruit breads.

We are seeking a skilled Pastrycook to contribute to the production of our artisan sweet goods line, including brioche, croissants, and other pastries. The successful candidate will work with raw ingredients to prepare, bake, and finish products to a consistently high standard.

Key Responsibilities

  • Set up the pastry workstation daily, ensuring all ingredients, tools, and equipment are prepared for production.
  • Accurately weigh and measure ingredients to maintain consistency and quality across batches.
  • Prepare, mix, and bake doughs and batters for croissants, brioche, sweet breads, and related products.
  • Carry out hand-moulding, laminating, proofing, and baking in line with artisan methods.
  • Operate bakery equipment, including mixers, sheeters, and stone-deck ovens, safely and efficiently.
  • Assist senior bakers and pastry staff with coordinating daily production schedules.
  • Monitor ingredient levels, record daily usage, and advise management of stock replenishment needs.
  • Produce pastries and sweet baked goods to established recipes and company standards.
  • Check finished products to ensure flavour, texture, and appearance are consistent with artisan quality.
  • Contribute ideas for recipe improvement and development of new sweet baked goods.
  • Maintain accurate production logs, wastage reports, and temperature records.
  • Ensure daily output is aligned with production requirements and minimises waste.
  • Maintain a clean, hygienic workstation in compliance with HACCP, food safety, and OHS standards.
  • Store ingredients and equipment correctly to preserve freshness and maintain food safety.
  • Work collaboratively with bakers, pastry staff, and management to meet operational goals.

Qualifications And Experience

To be eligible for this role, you must have:

  • A Certificate III or Certificate IV in Patisserie (or equivalent) with at least 1 year of full-time relevant work experience; OR
  • At least 3 years of full-time relevant work experience if no formal qualification is held

Skills & Attributes

  • Hands-on experience producing pastries, including croissants and sweet breads.
  • Ability to work with artisan methods in a small-batch setting.
  • Strong attention to detail in shaping, proofing, and finishing.
  • Good organisational skills and reliability in meeting production requirements.
  • Commitment to hygiene and HACCP compliance.
  • Physically capable of bakery work in a fast-paced environment.
