Perched on the spectacular Roebuck Bay in Broome, the Mangrove Hotel is a 4.5-star resort proudly owned by the Prendiville Group. We are known for our unforgettable views, seasonal fine dining, and high-calibre hospitality.
We are looking for a Head Chef to lead with precision and cook with passion to join our leadership team.
Our venue features:
- Johnny Sausage - our award-winning seasonal Italian restaurant, ranked in the Top 100 Restaurants in WA (2024)
- Bay Club Kitchen - serving à la carte covers each evening during peak season
- Two large commercial kitchens & three modern conference spaces
- Capacity for up to 800 guests for outdoor events and over 300 indoor diners
- A kitchen brigade of 16-18 chefs, 3-4 sous chefs, and 2-3 kitchen hands
- We are a tight-knit, hands-on team that thrives on creativity, consistency, and collaboration.
Key Responsibilities:
- Drive menu innovation across all outlets
- Maintain excellence in food quality, presentation, and service
- Lead, train, and mentor the kitchen team
- Manage stock, pricing, COGS, and supplier relations
- Uphold the highest standards of food safety and hygiene
- Support daily kitchen operations and event execution
What You'll Bring
- Previous experience in high-volume, premium dining
- Background in a Michelin-starred or hatted restaurant
- Certificate III in Commercial Cookery (or equivalent)
- Food Safety Supervisor Certificate
- Skilled in menu costing, Excel, rostering, and operational planning
- A refined palate and passion for culinary creativity
- A leadership style that's hands-on, calm under pressure, and solutions-focused
- Availability to work nights, weekends, and public holidays
