We offer guests a relaxed, beautiful dining experience with spectacular water views, exceptional food, top-quality ingredients, and a menu that blends fine dining with family-friendly favourites. The Role

We are seeking an experienced, creative, and technically excellent Head Chef and chef all levels with a strong fine dining background to lead our kitchen. You will be responsible for maintaining and elevating quality, overseeing kitchen operations, mentoring the team, and contributing to menu development that reflects our elevated modern Australian style.

• Oversee all kitchen operations, including food preparation, presentation, and consistency
• Lead, train, and mentor kitchen staff to high standards of efficiency, cleanliness, and food quality
• Create, refine, and maintain menus and specials with attention to seasonality, ingredient quality, and guest experience
• Maintain strict compliance with food safety, health, and hygiene standards
• Control food and labour costs, manage supplier relationships, and ensure efficient use of resources
• Collaborate with management on guest experience, events, functions, and service excellence

Essential Qualifications & Experience

• Significant experience (minimum 2–5 years) in a senior chef role within a fine dining restaurant or equivalent
• Strong culinary skills, particularly in modern Australian cuisine or a closely related style
• Proven experience in high volume as well as high complexity food service, including functions and special events
• Excellent leadership, communication, and team management skills
• Strong sense of taste, presentation, consistency, and attention to detail
• Understanding and commitment to maintaining standards of food safety, hygiene, and kitchen operations
