Position Overview:

As Sous Chef, you will work closely with the Executive Chef to oversee multiple kitchens across the venue, delivering consistent quality across quick-service outlets, conference and events, and à la carte offerings. You'll be responsible for training and leading a large kitchen team, managing multiple service areas simultaneously, and maintaining high standards of communication, efficiency, and execution.

Main Duties:

  • Lead daily operations across several kitchen outlets
  • Oversee large-scale quick-service production and high-volume trade
  • Support planning and execution of conferences, banquets, and functions
  • Train, mentor, and develop junior chefs and kitchen staff
  • Maintain compliance with food safety and WHS standards
  • Collaborate with senior leadership on menu development and service delivery

Skills/Experience Required:

  • Proven experience (minimum 3yrs at sous chef level) in high-volume, multi-outlet venues
  • Skilled in quick-order service, large team leadership, and events catering
  • Exceptional time management, communication, and multitasking ability
  • Passionate about mentoring and developing kitchen staff
  • Certificate IV in Commercial Cookery
  • Full Australian working rights and currently residing in Sydney

About The Role:

The Chef de Partie plans, organizes and controls their section for each service period, ensuring high quality and consistency.

The ideal candidate enjoys creativity and innovation and provides mentorship to the junior chefs in the brigade. As well as showcasing exceptional technical ability in culinary, the role requires sound organizational skills and a strong work ethic.

What you will do:

  • You will be hungry to elevate your craft to the next level to help deliver flawless dining experiences
  • Ensure the highest quality of all food prepared in the kitchen, inspecting taste, temperature and visual appeal
  • Co-ordination of food preparation, ordering, stock control and day to day execution of all culinary activities
  • Quality management of food as well as observing all food safety components in line with local regulations and company procedures
  • Comply with hygiene standards and ensure the highest level of cleanliness and sanitation in all food preparation
  • Examine food suppliers and received goods for quality and quantity
  • Ensure equipment and fixtures are maintained well and reports any faults and damage

  • You'll be a master of your craft with previous experience at the same level, strong product knowledge and technical skills
  • A passion for creating superb food in order to provide a memorable guest dining experience
  • Knowledge and interest of current kitchen trends and cuisines
  • Excellent communication & organisational skills
  • The ability to work a rotating roster including weekends and evenings

Job Type: Full-time

Pay: $54,013.87 – $83,013.14 per year
