Our esteemed client, EightyOne Bistro & Taphouse, a vibrant and modern dining venue located in Berwick, Victoria, is seeking a driven and talented Sous Chef to join their dynamic team. They are recognised for their great food, craft beer, music, and wine. With a reputation for blending creativity with purpose, they bring some of Australia's best independent craft beers with a constantly changing offering.

The Sous Chef will add a passion for creativity, consistency, and hospitality, delivering memorable meals that pair perfectly with their rotating selection of craft beers. The role will have a key leadership role in the kitchen, supporting the Head Chef in overseeing daily operations, maintaining high standards of food preparation, and mentoring kitchen staff, focusing on bold flavours and thoughtful presentation.

The annual salary for the Sous Chef position is $73,150 to $76,000 plus superannuation.

Duties include:

  • Developing menus, forecasting food and labor expenses, and managing food supply orders.

  • Overseeing the quality of dishes throughout preparation and presentation.

  • Collaborating with Managers, Dietitians, and kitchen and service staff on food preparation concerns.

  • Showing cooking methods and providing guidance on culinary techniques.

  • Cooking and preparing meals.

  • Communicating and ensuring compliance with hygiene standards.

  • May be responsible for hiring and training kitchen staff.

  • May also handle food preservation and freezing tasks.

  • Managing inventory levels and ensuring efficient use of ingredients to minimise waste.

  • Assisting the head chef in planning and executing special events or seasonal menus.

Qualifications:

  • Should have more than one (1) year of experience in a similar setting.

  • Must hold a Certificate III and IV in Commercial Cookery, Advanced Diploma of Hospitality Management.
