Shou Sumiyaki is a Melbourne-based hospitality business specialising in the traditional Japanese art of charcoal grilling, known as Sumiyaki. Located in the heart of the CBD, our restaurant highlights premium A5 Japanese Wagyu, locally sourced Australian Wagyu, and seasonal seafood prepared over authentic Binchotan charcoal. Our dining spaces include counter-style yakitori seating, a relaxed main dining room for smaller gatherings, and a tatami-inspired private room accommodating up to forty guests - perfect for everything from intimate dinners to large corporate functions.

With the ongoing growth of our business, we are seeking a skilled and qualified Cook to join our team on a full-time basis.

Key Responsibilities

Overall Goal:

· Develop a strong understanding of kitchen operations and support the Head Chef in delivering exceptional standards.

· Uphold the values of the restaurant and actively contribute to the kitchen team's success.

Service:

· Maintain consistent quality and efficiency of food production.

· Ensure mise-en-place is completed and communicated before service.

· Deliver food that meets customer expectations promptly and quietly.

· Support smooth dining room operations and accommodate special requests where possible.

Financial Control:

· Verify invoices for products received.

· Implement practices that minimise food waste.

Quality Control:

· Ensure all supplies meet quality standards and offer value for money.

· Follow and enforce standard recipes, procedures, and mise-en-place practices.

· Maintain presentation and taste standards at all times.

· Prevent substandard food items from reaching customers.

Stock & Ordering:

· Place food and supply orders as directed.

· Inspect and verify freshness and accuracy of delivered products.

· Assist with organisation and cleanliness of storage areas.

Repairs & Maintenance:

· Report equipment issues to the Head Chef.

· Ensure kitchen equipment is properly used, cleaned, and maintained.

· Communicate safety information and equipment guidelines to the team.

Hygiene, Sanitation & Safety:

· Adhere to daily, weekly, and monthly cleaning schedules.

· Ensure safe handling and use of cleaning materials.

· Maintain a hygienic and safe work environment, including awareness of fire safety equipment.

Qualifications & Skills

· Diploma of Hospitality Management (or equivalent).

· Minimum 1 year of experience as a Cook.

· Strong communication and leadership abilities.

· Solid cooking techniques, knife skills, and knowledge of varied cooking methods.

· Good business awareness and food safety knowledge.

· Creativity in developing new dishes and adapting existing ones.

This role is available for immediate start.

Job Type: Full-time

Pay: $75,000.00 – $80,000.00 per year
