Melton Country Club (MCC), part of the Essendon Football Club has a rare opportunity for an experienced Sous Chef. We are seeking a driven and highly motivated individual with at least 3-5 years of experience to join our kitchen team. This is a hands-on role where you will work closely with the Head Chef to deliver high-quality meals, maintain smooth kitchen operations, and support the overall success of the venue.

Key Responsibilities

  • Support the Head Chef in the day-to-day management of the kitchen.
  • Take charge of kitchen operations in the absence of the Head Chef.
  • Assist with menu planning, food preparation, and service delivery.
  • Manage stock levels and stock rotation, conduct stocktakes and assist with ordering.
  • Ensure food safety, hygiene, and workplace health and safety standards are maintained at all times.
  • Train, mentor, and support junior kitchen staff.
  • Work effectively both as part of a team and independently.
  • Be available and flexible to work split shifts, weekends, and public holidays as required.
  • Proven capability to independently service functions from start to finish.

Skills & Experience

  • Proven experience as a Sous Chef in a fast-paced kitchen environment.
  • Relevant trade qualifications (Certificate III in Commercial Cookery or equivalent).
  • Strong leadership skills with the ability to step confidently into a leadership role when required.
  • Positive and can do attitude.
  • Excellent time management, organisational, and communication skills.
  • Ability to work unsupervised and under pressure.
  • A genuine team player with a passion for food and hospitality.
  • Hold a high regard for personal hygiene.
  • Maintain strict food safety, sanitation and HACCP Standards.

Key Selection Criteria

  • Proven experience as a Sous Chef in a busy kitchen environment, with the ability to prepare and present high-quality meals consistently.
  • Strong knowledge of food safety standards, kitchen hygiene, and stock control, with relevant food handling and safety certifications.
  • Ability to work effectively under pressure, manage multiple dockets, and maintain attention to detail during busy service periods.
  • Flexibility to work across a rotating roster, including nights, weekends, and public holidays, with a strong work ethic and team-focused attitude
