Callao, Sydney's home of Nikkei Peruvian cuisine, is looking for a passionate and skilled Sous Chef to join our ambitious kitchen team.

Our menu fuses the bold, vibrant flavours of Peru with the precision and elegance of Japanese technique — a modern take on Nikkei cuisine that's fast earning a reputation in Sydney's dining scene.

We're after someone who thrives in a high-performance environment, leads by example, and is excited to push creative boundaries.

What we're looking for:

  • Proven experience as a Sous Chef or Senior CDP ready to step up
  • Deep respect for quality produce, sharp technique, and clean execution
  • Passion for Nikkei, Peruvian, Japanese, or modern fusion cuisine
  • Strong leadership, communication, and time management skills
  • Commitment to consistency, cleanliness, and a positive kitchen culture
