Manky Sally's, Moo Brew's taphouse in Salamanca, has been open for 21 months and is fast establishing itself as one of Hobart's quirkiest and most welcoming venues. Our vision is to build on this reputation even further, proving that craft beer bars and restaurants can also be a soft and beautiful place to land, and sling world class food as well as Moo Brew beers
We take our food and beer pretty seriously at Sally's. This is not your regular taphouse style menu. This is innovative, asian-inspired, flavour-packed plates. We focus on high-quality local produce which is sustainably sourced (no factory farmed animals), which challenges our chefs to think outside the box. With this in mind, we are in need of an exceptional and experienced Head Chef to lead our Sally's kitchen team in Salamanca.
You will work with and design new seasonal menus that highlight fresh, local produce while demonstrating leadership and delivering a high quality dining experience for guests. You'll also be looking to continually improve your knowledge and try new things, whilst mentoring the team around you. Make no mistake - we'll have fun. Experimental beers are brewed onsite, as well as having the core Moo Brew range on offer. We also have regular monthly vinyl DJ sessions and Limited Release beer launches to keep things interesting.

The gig:
- Work with Moo Brew's GM's and Manky Sally's VM to create and implement exceptional culinary experiences;
- Responsibility for quality control, maintaining consistently high standards of product;
- Facilitation and delivery of smooth & well managed service periods with the aim of delivering a memorable dining experience;
- Management, guidance & mentorship of all kitchen staff across service & non-service periods;
- Responsible for ordering and stock management, minimising food costs and wastage;
- Ensure all WHS and hygiene standards are adhered to by all kitchen staff;
- Management of valuable supplier relationships;
- Responsibility for kitchen presentation and asset management;
- Rostering of staff and timesheet management;
- Weekends and some public holidays are required.
The you:
- Significant experience in a similar leadership role;
- Strong leadership, interpersonal and communication skills;
- Significant experience in driving, motivating, and developing teams;
- A passion for food and a willingness to express creativity in cooking;
- Exhibited pride in your profession as well as confidence in supporting and teaching others;
- Ability to adapt to a regularly changing environment and maintain high standards when under pressure;
- A confident and creative cooking style with a strong emphasis on quality and presentation;
- Passionate about quality produce and food hygiene;
- A positive and enthusiastic personality that enjoys working collaboratively;
- Strong organisational, planning, and time management skills.
