**Job Description:**
As a Chef de Partie specialising in pasta and woodfire cooking, you will play a crucial role in maintaining the high standards of culinary excellence. Working closely with our Head Chef and kitchen team, you will be responsible for the preparation, cooking, and presentation of pasta dishes and woodfire-grilled items. Your creativity, attention to detail, and passion for Italian cuisine will be essential in contributing to our menu's success.
**Key Responsibilities:**
1. **Preparation:** Prepare pasta dishes and woodfire-grilled items according to recipes and standards set by the Head Chef. This includes but is not limited to making fresh pasta, preparing sauces, marinating meats, and overseeing the woodfire cooking process.
2. **Quality Control:** Ensure that all dishes leaving the kitchen meet our quality standards in terms of taste, presentation, and portion size. Maintain consistency in flavor and appearance across all dishes.
3. **Kitchen Operations:** Work efficiently in a fast-paced kitchen environment, coordinating with other kitchen staff to ensure smooth service. Manage inventory and stock rotation of pasta ingredients, woodfire cooking supplies, and other related items.
4. **Hygiene and Safety:** Adhere to food safety and hygiene regulations at all times. Maintain a clean and organized workstation, following proper sanitation procedures and kitchen cleaning schedules.
5. **Menu Development:** Collaborate with the Head Chef on developing new pasta and woodfire-grilled dishes, incorporating seasonal ingredients and innovative cooking techniques while staying true to Italian culinary traditions.
6. **Training and Mentorship:** Provide guidance and support to junior kitchen staff, assisting them in developing their skills in pasta-making, woodfire cooking, and other culinary techniques.
**Requirements:**
- Proven experience as a Chef de Partie or similar role in an Italian restaurant, with a focus on pastas.
- In-depth knowledge of Italian cuisine, including pasta varieties, sauces, and traditional cooking methods.
- Strong culinary skills, with the ability to execute dishes to a high standard under pressure.
- Excellent teamwork and communication skills.
- Ability to multitask and prioritize tasks effectively.
- Attention to detail and a passion for creating exceptional dining experiences.
- Certification from a culinary school or relevant training program is a plus.
