  • The Clubhouse, established in 1911 during the town's prosperous coal mining era, is seeking to add a Sous Chef to their vibrant kitchen team.

The typical job responsibilities will include, but are not limited to the following:

  • Prepare and cook high-quality dishes following menu guidelines.
  • Assist in managing kitchen operations and supervising junior staff.
  • Ensure dishes meet restaurant standards in taste and presentation.
  • Contribute to menu development and seasonal menu planning.
  • Monitor stock levels and place orders when necessary.
  • Ensure compliance with food safety and hygiene regulations.
  • Train and mentor junior kitchen staff in best practices.
  • Oversee food preparation and designated kitchen sections.
  • Maintain a clean, organised, and efficient kitchen workspace.
  • Support the Head Chef with daily kitchen operations.
  • Implement and maintain portion and waste control measures.
  • Demonstrate and teach various cooking techniques to staff.
  • Assist with creating daily specials and desserts.
  • Oversee the kitchen in the absence of the Head Chef.
  • Work collaboratively in a multicultural kitchen environment.

Applicants must meet the following minimum requirements to be considered for the role:

  • Minimum of 2-3 years of experience in a fast-paced kitchen environment.
  • Certificate III and or IV in Commercial Cookery; a Diploma in Hospitality is advantageous.
  • Strong leadership and communication skills to supervise and train staff.
  • Proven ability to work efficiently under pressure while maintaining high standards.
  • Availability to work a rotating roster, including weekends and holidays.
  • Experience in menu development, stock control, and ordering.
  • In-depth understanding of food safety, hygiene regulations, and best practices.
  • Ability to maintain an organised, clean, and compliant kitchen environment.
