We're on the lookout for a Head Baker to lead the ovens at Fabbrica Bread Shop, part of the Love Tilly Group.
If the smell of slow-fermented dough makes you happy, and you're as comfortable leading a team as you are elbow-deep in flour at 4 a.m., then you might just be the person we're looking for
About the RoleAs Head Baker, you'll take the reins of our Rozelle bakery overseeing production, leading a passionate team, and continuing to grow our reputation for exceptional bread, pastries, and viennoiserie.
You'll be responsible for:
- Daily production of breads, pastries, and seasonal specials
- Managing and mentoring a small, talented team of bakers
- Maintaining quality and consistency across all products
- Collaborating with the wider Love Tilly Group chefs and venues on new ideas and projects
- Overseeing ingredient sourcing, ordering, and stock management
- Driving efficiency while keeping true to artisanal methods
We're looking for someone who:
- Has significant experience in a senior baking role (ideally artisan or restaurant group background)
- Leads with creativity, consistency, and calm under pressure
- Understands fermentation, lamination, and the beauty of simplicity
- Takes pride in training others and fostering a positive kitchen culture
- Is organised, reliable, and driven to build something special
