Millers Bread Kitchen is seeking a motivated and experienced Qualified PastryChef or Qualified Baker to step into the role of Second in Charge within our busy pastry section. Join our passionate bakery and café team on the picturesque Mornington Peninsula.
Roster: Wednesday to Sunday
Start Times: 4:00 am – 5:00 am
About the Role
As the Second in Charge of our pastry kitchen, you'll assist the Head Pastry Chef in overseeing daily operations while maintaining the exceptional quality and consistency our customers expect. This is a hands-on role focused on production, supervision, and upholding high standards of presentation, cleanliness, and food safety.
You'll also lead the team in the Head Pastry Chef's absence to ensure smooth daily operations.
Production includes:
· Proofing and baking sweet yeasted laminated pastries (croissants, danishes, brioche, etc.)
· Mixing and laminating pastry doughs
· Producing savoury pies and sausage rolls
· Mixing, baking, portioning, and decorating cakes
Key Responsibilities
- Assist with menu planning, daily production, and quality control
- Supervise and support pastry and kitchen staff
- Manage stock control and ingredient ordering with management
- Maintain strict hygiene and food safety standards
- Contribute to staff training and development
- Act as Head Pastry Chef when required
About You
· Proven experience as a Pastry Chef, with leadership or second-in-command duties
· Strong knowledge of pastry techniques, laminations, and dessert presentation
· Ability to work efficiently under pressure in a fast-paced environment
· Excellent communication and team leadership skills
· A passion for quality, consistency, and creativity in pastry making
