ESCA is expanding, and we're searching for hospitality professionals ready to take their careers to the next level. We have two exciting opportunities at our hatted Surry Hills venues, Ito & Nour for an Assistant Manager and a Head Sommelier to join our award-winning team.

Assistant Manager

As an Assistant Manager, you will be a hands-on leader, working closely with the General & Restaurant Manager to deliver exceptional guest experiences, maintain smooth day-to-day operations, and motivate a high-performing team.

Your responsibilities will include:

  • Assisting with the daily running of the venue, from floor management to guest service excellence
  • Leading, training, and mentoring FOH staff to deliver ESCA's high standards
  • Assisting in managing bookings, functions, and guest enquiries
  • Maintaining strong relationships with our kitchen team to ensure seamless service
  • Overseeing opening/closing procedures and cash handling
  • Supporting the Senior Manager with rostering, inventory, and reporting

We're looking for someone with:

  • Previous leadership experience in a premium or high-volume venue
  • A natural ability to inspire, coach, and lead by example
  • Strong operational skills with a focus on guest satisfaction
  • A passion for creating memorable moments for every guest

Head Sommelier

As our Head Sommelier, you will be the driving force behind our wine and beverage program, shaping its vision and delivering a world-class drinks experience that complements our food offering. This is a leadership role requiring a balance of operational excellence, guest engagement, and strategic planning.

Your responsibilities will include:

  • Designing, curating, and maintaining an exceptional wine list that reflects the restaurant's identity and seasonal changes
  • Managing the cellar, including stock rotation, ordering, and supplier relationships
  • Leading wine service during service periods, ensuring seamless guest experiences
  • Training, mentoring, and inspiring FOH staff to develop their wine knowledge and sales confidence
  • Hosting tastings, wine dinners, and special events to engage guests and showcase the wine program
  • Monitoring wine sales performance and implementing strategies to meet beverage KPIs
  • Maintaining compliance with all liquor licensing laws and ESCA policies
  • Overseeing the broader beverage program including sake, spirits, and non-alcoholic offerings

We're looking for someone with:

  • Minimum 2–3 years' experience in a senior sommelier or head sommelier role
  • WSET Level 2 qualification (Level 3 preferred)
  • Proven track record of managing and developing a high-performing wine program
  • Exceptional guest engagement skills with the ability to educate and inspire
  • Strong industry connections and an up-to-date knowledge of wine trends

Ability to work collaboratively with the kitchen and FOH teams to deliver an exceptional, unified dining experience
