Job Title: Executive Chef/Cook at Caffe Cherry Beans

Reporting to: Café Manager

Hours of work: Full/Casual

Overall Objective: Direct the preparation, seasoning, and cooking of salads, soups, fish, meats, vegetables, desserts, or other foods. Plan and price menu items, orders supply, and keep records and accounts. Supervises and participate in cooking and baking and the preparation of foods. Writes weekly schedules according to business and projected goals for labour dollars or percentages. Uses labour dollars and menu costing programs to price labour and food cost percentages. Must participate in checking of all purchased supplies for quality and account for each delivered item.

Specific Duties and Responsibilities

· Conduct training for personnel/Manage kitchen staff

· Ensure highest level of food quality, taste and presentation

· Direct and coordinate food or beverage preparation

· Monitor worker performance

· Ensure that all kitchen employees consistently adhere to uniform, grooming and appearance standards

· Preparing, cooking and presenting food in line with required standards and at the right level

· Make sure that food is served promptly

· Monitor food production to ensure consistent quality and portion size

  • Follow relevant hygiene, health and safety guidelines

· Investigate customer complaints

· Maintain production or work records

· Modify work procedures or processes to meet deadlines

· Schedule employee work hours with manager

· Direct and coordinate activities of workers or staff

· Inspect facilities or equipment for regulatory compliance

· Oversee work progress to verify safety or conformance to standards

· Plan special menus with pricing and inform to the head office for approval

· Requisition stock, materials, supplies or equipment

· Resolve or assist workers to resolve work problems

· Control food cost by assisting in training kitchen staff on the proper methods of food preparation and handling, by training kitchen, restaurant and steward employees on how to handle leftover food items.

Tasks include:

· Determine production schedules and staff requirements necessary to ensure timely delivery of services

· Recruit and hire staff, including cooks and other kitchen workers

· Analyse recipes to assign prices to menu items, based on food, labour, and overhead costs

· Collaborate with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of customers

· Check the quality of raw and cooked food products to ensure that standards are met

· Check the quantity and quality of received products

· Record production and operational data on specified forms

· Estimate amounts and costs of required supplies, such as food and ingredients

· Order or requisition food and other supplies needed to ensure efficient operation

· Monitor sanitation practices to ensure that employees follow standards and regulations

· Arrange for equipment purchases and repairs

· Instruct cooks and other workers in the preparation, cooking, garnishing, and presentation of food

· Determine how food should be presented, and create decorative food displays

· Inspect supplies, equipment, and work areas to ensure conformance to established standards

· Demonstrate new cooking techniques and equipment to staff

Health and Safety

· Ensure all accidents are recorded in the relevant accident books

· Use the correct handling and lifting procedures as outlined in induction training

· Safely handles all hot and cold drinks during drink preparation

· To keep up to date with all H & S procedures and methods

· Ensure all tasks are carried out in accordance with the café's health, hygiene, quality and safety standards

Job Types: Full-time, Fixed term

Contract length: 12 months

Pay: $54,402.78 – $83,402.35 per year
