We are looking for a highly skilled and experienced Sous Chef to join our dynamic culinary team in Australia. As the second-in-command in the kitchen, you will support the Head Chef in all aspects of back-of-house operations, with a strong focus on kitchen management, team leadership, and maintaining culinary excellence. This role is ideal for a candidate with proven leadership experience and a culinary qualification recognised in Australia.

Key Responsibilities:

  • Assist the Head Chef with all kitchen operations, including food preparation, service, inventory, and staff management.

  • Lead and mentor kitchen staff to ensure high performance, adherence to recipes, and consistency in food quality and presentation.

  • Manage kitchen rosters, delegate tasks, and ensure effective workflow and communication during service.

  • Ensure all food is prepared in accordance with Australian food safety regulations and OH&S standards.

  • Maintain strict stock control, reduce food wastage, and help manage food costs and supplier relationships.

  • Oversee the daily operations of the kitchen in the Head Chef's absence.

  • Contribute to menu development with creative input and knowledge of current food trends.

  • Conduct regular staff training sessions to maintain and improve team standards and efficiency.

Requirements:

  • Certificate III or IV in Commercial Cookery, or equivalent formal culinary qualification recognised in Australia.

  • Minimum 3 years of experience in a leadership role within a busy kitchen environment.

  • Sound knowledge of food safety (preferably holding a valid Food Safety Supervisor certificate).

  • Strong organisational, time management, and multitasking abilities.

  • Proven ability to lead, motivate, and train a team in a fast-paced setting.

  • Excellent communication and problem-solving skills.

  • Passion for food, creativity in the kitchen, and attention to detail.
