Pilu at Freshwater’s operations are diverse and requires flexibility, efficiency, and attention to detail. Our Bar Manager oversees 3 bars and reports to the Restaurant Manager and General Manager.

**Requirements**:

- At least 4 years bartending with a minimum of 1 year in a supervisory role
- Full knowledge of classic cocktails
- Strong wine knowledge, Italian focus preferred
- Excellent team management skills
- Proven track record of managing bar costs
- Thorough understanding of mixology, i.e. flavour profiles, on trend ingredients, showmanship
- Creative and distinct cocktail creations
- Physically fit and able to lift 20kg

**Duties**:

- Create and Implement unique Italian influenced cocktails for various venues, bearing in mind the capabilities of bar set up and requirements of each bar
- Prep all required elements for cocktails.
- Consistently train all bar staff on:

- requirements of each cocktail
- ordering procedures
- venue stock takes
- forecasting procedures
- cocktail execution
- bar set up
- bar pack down
- Work services in each venue to fully understand the difference in each venue’s service and where improvements can be made
- Manage bar staff and team dynamic
- Monitor bar staff performance and report as required
- Assist in assessing and recruiting bar team members
- Attend offsite training to further develop skillset and bring back fresh ideas
- Research competition and ensure we remain competitive in our Bar Offering
- Implement and edit bar policies and procedures
- Review cleanliness standards of all bars and address with relevant team as necessary
- Complete full venue stock takes as required
- Recommend improvements for more efficient services
- Maintain and promote the Pilu Ethos of inclusivity and employee progression

**Salary**: $65,000.00 - $70,000.00 per year
