Sprout Artisan Bakery has built a solid reputation within the Brisbane market for producing quality handcrafted baked products and maintaining high standards. Operating as a wholesale bakery supplying a select number of cafes and restaurants daily with Sourdough Breads and Pastry, we have a small but driven team who are dedicated to striving for excellence.

Due to a strong period of growth and substantial demand for our products we are seeking passionate and driven individuals to join our team and contribute to our success as we expand our brand and presence within the local market.

The role will see you working in a small but cohesive team alongside some well-respected talent that has over 25 years of experience to draw from..

THE ROLE

Reporting to the Company Director, you will be responsible for the daily management and delivery of our sourdough bread production and baking of product lines. The role is fast paced due to production timelines and will require you to have strong organisational skills. The remit of this position is to continue to deliver on the current product lines according to recipes and ensuring staff are producing according to deadlines, as well as being tasked to innovate and produce new products as the seasons and available ingredients change.

SKILLS REQUIRED
- Maintaining the natural levain
- Hand shaping, moulding and working sourdough
- Ability to hand shape baguettes
- Working with yeasted breads and similar doughs
- Ability to operate convection and deck ovens and typical bakery equipment
- Basic mathematics for recipe calculation
- Strong people and communication skills are essential
- Ability to take direction, communicate and delegate
- Attention to detail, cleanliness and hygiene
- Experience with inventory control
- Leadership skills - ability to lead and supervise staff
- Confidence to work under pressure

EXPERIENCE/REQUIREMENTS
- Firstly a passion for baking a thirst for knowledge
- Previous experience in a similar role, artisan bakery or high volume pastry kitchen
- Minimum 3 years experience
- Baking qualifications, trade certificate or length of tenure
- Understanding of natural fermentation and yeasted dough's
- A passion to strive for quality and consistency in output
- Understanding of OH&S standards and operating procedures
- Real team player who is happy to assist where required
- Ability to work weekends and public holidays
- Flexibility on availability for roster and early starts

Pay: $65,000.00 - $75,000.00 per year
