**Responsibilities**:
- Meat needs to check for freshness and suitability for meatball, rissoles etc Prepare crumbed cuts of meat to produce cooked smallgoods.
- Preparing meat for sale by removing bones, trimming fat, and cutting, mincing and grinding meat to shape and size for display or as ordered.
- Preparing crumbed cuts of meat, and marinating, seasoning, and curing special cuts
- Selecting and preparing meat to produce smallgoods.
- Operating machines to grind, mix, mince and tenderise meat.
- Making seasonings and pickles by mixing spices, salt, and other ingredients
- Operating sausage filling machines, smoking chambers, and cooking kettles and vats.
- Advising customers on the suitability and uses of cuts of meat.
- Quality control of all consumables
- Preparation of all meat (includes mincing, crumbing, and preparing to a specific recipe) and cook as required.
- Preparation of all marinates and seasonings to the high quality expected at Torre Butchers.
- Ensuring all recipes for smallgoods, sausages, burgers etc. are followed exactly as required.
- Following all dietary requirements as specified by our customers.
Duties/Task:
- Using machinery as required for preparing and making of all pre-prepared products Initiating and preparing all condiments and marinates.
- Preparing and maintaining all machinery and cooking implements on the premises (sausage filling machine, mincers, ovens etc.)
- Maintaining all ovens, grills etc. to ensure temperatures are exact and all are in excellent working order, complying with HACCP requirements.
- Ensuring food storage is stored adequately in temperature-controlled environment.
- Provide on the job training to new employees regarding food preparation and equipment within your specific area.
- Responsible for the management and maintenance of machinery, ie mincer, bansaws, sausage machine and oven to name.
- This area of our business is extremely important and must be kept up to the standards required by HACCP.
Skills and Experience
- Must have at least 2 years’ experience as a butcher
- Qualification in butchery is prefer but no essential.
- Have experience in a fast-paced employment environment in the same industry.
- Must have strong customer service skills.
- Must have solid knife skills.
- Understand English.
Pay: $74,000.00 - $75,000.00 per year
Schedule:
- 8 hour shift
