Pyramids Bakery is an authentic Egyptian bakery located in the heart of Footscray, specialising in traditional Egyptian sourdough flatbread (Aish Baladi) and other Middle Eastern baked goods. Position Overview

Key Responsibilities
- Prepare and bake Egyptian sourdough flatbread (Aish Baladi) from start to finish, including mixing, fermentation, shaping, proofing, and baking.
- Maintain and manage sourdough starters to ensure consistent flavour and quality.
- Operate and monitor baking equipment (including gas ovens and conveyor systems).
- Maintain high standards of cleanliness, hygiene, and food safety at all times.
- Follow daily production schedules to meet demand.
- Work collaboratively with the bakery team to ensure smooth and efficient operations.

**Requirements**:

- Minimum 3 years of hands-on experience in baking Egyptian sourdough flatbread (Aish Baladi) or similar traditional breads.
- Proven knowledge of sourdough fermentation techniques and traditional Egyptian bread-making methods.
- Reliable, punctual, and committed to consistent quality.
- Able to work early morning shifts, weekends, and under pressure when required.
- Strong attention to detail and ability to maintain clean working conditions.
- Understanding of food safety and hygiene standards.

Preferred Skills
- Experience in operating commercial bakery ovens and dough mixers.
- Knowledge of flatbread dough hydration, fermentation timing, and temperature control.
- Ability to train or assist junior bakers if needed.
