**Retail Butcher Responsibilities**:

- Performing display window and pre-pack cutting tasks.
- Providing excellent customer service
- Breaking down pork, chicken, and lamb carcasses.
- Undertaking general butchering duties including mincing, sausage-making, and value-adding processes.
- Conducting general daily cleaning duties to maintain hygiene and sanitation standards.

**Wholesale Butcher Responsibilities**:

- Demonstrated experience in portioning and order cutting.
- skilled in pork carcass breakdown and trimming.
- Skilled in slicing and dicing primals for wholesale distribution.
- Performing general butchering tasks such as mincing, sausage-making, and crumbing.
- Fulfilling general daily cleaning duties to ensure workplace cleanliness and compliance with hygiene standards.
