Job Summary:

We are seeking an experienced and skilled Executive Steward to join our team. As a key member of our Stewarding Department, you will be responsible for ensuring the highest standards of cleanliness and sanitation in our kitchens and food storage areas.

Key Responsibilities:

  • Operational Management: Plan, coordinate, and manage daily operations in the Sanitation area of the Kitchen, ensuring all equipment is clean and sanitized.
  • Sanitation and Hygiene: Ensure all kitchens and food storage areas are kept clean and tidy, adhering to current Health & Hygiene regulations.
  • Equipment Maintenance: Liaise with Executive Chef and outlet Department Heads/Supervisors to ensure all equipment is in good working order.
  • Supply Chain Management: Ensure each outlet is supplied with sanitized clean and dry operational equipment.
  • Quality Control: Ensure correct dishwashing and pot washing methods and systems are being adhered to.
  • Team Development: Ensure competence of Sanitation team in the operation of all machines in the department.
  • Chemical Management: Control and check of chemical usage and correct application for specific tasks.
  • Cost Control: Contribute to cost control through energy conservation and the careful use of water, cleaning materials, and other appliances.
  • Roster Management: Action and coordinate employee rosters.
  • Inventory Management: Carry out stock take of crockery and all kitchen equipment.

Requirements:

  • Experience: Minimum of two years supervisory experience in a similar role.
  • Environment: Experience in a high-volume, fast-paced kitchen environment.
  • Knowledge: Strong understanding of chemical handling risks and safe-work practices.
  • Skills: Ability to balance operational needs with supporting the team and completing administrative tasks.
  • Flexibility: Flexibility to work a rotating roster including mornings, nights, weekends, and public holidays.
