The Role:

We are seeking an experienced and motivated Sous Chef to join our kitchen team. The successful candidate will work closely with our Head Chef/Director to contribute to the success of our kitchen operations.

Key Responsibilities:

  • Develop and implement menu plans that cater to customer demand and market requirements within budget constraints.
  • Prepare in-house fresh dough, sauces, and toppings to maintain quality consistency.
  • 'Hand stretch' pizza dough and assist with slow-rise dough preparation.
  • Ensure working knowledge of authentic Italian cuisine and maintain high food presentation standards.
  • Monitor par levels of food stock, kitchen equipment, and report any issues to management.
  • Oversee food preparation, ensuring freshness, quality, and adherence to food safety guidelines.
  • Supervise and train junior kitchen staff, promoting a positive and collaborative kitchen culture.
  • Maintain a clean and organized kitchen, adhering to hygiene and sanitation standards.

Requirements:

  • A genuine passion for cooking and creativity.
  • Trade qualifications (i.e. Cert III or IV in Commercial Cookery).
  • Food Safety Supervisor Certificate.
  • At least 2 or more years experience as a Chef in the industry.
  • Thorough understanding of food safety standards and HACCP.
  • Ability to work efficiently in a fast-paced environment.
  • Strong organizational skills and attention to detail.
  • Excellent communication and teamwork abilities.
  • Leadership skills to motivate and guide a team.

Compensation:

AUD $75,000 per year plus superannuation benefits.
