We are seeking a highly skilled and strategic Executive Chef to lead our culinary team at Hamilton Island. As a key member of our operations team, you will be responsible for overseeing the production of high-quality food across multiple venues, ensuring seamless delivery and exceptional customer experiences.

Key Responsibilities:
  • Performance Analysis: Evaluate menu performance, profitability, and popularity to drive data-informed decision-making and optimize menu offerings.
  • Menu Innovation: Develop and refresh menus that showcase the unique identity of each venue, using seasonal ingredients and the latest culinary trends to create engaging and memorable dining experiences.
  • Market Research: Conduct thorough market research to stay ahead of culinary trends, customer preferences, and industry standards, ensuring the highest quality ingredients and production processes.
  • Operational Excellence: Oversee food cost management, minimize waste, and maintain supplier relationships to ensure quality ingredients and efficient production.

You are a seasoned culinary professional with a passion for innovation, analytics, and team leadership. You thrive in fast-paced environments, inspiring team morale through mentorship and collaboration. With a strong background in high-volume production, menu development, and cross-venue coordination, you are well-equipped to drive culinary excellence at Hamilton Island.

Requirements:

  • Certificate III in Commercial Cookery (Essential)
  • Current Food Safety Supervisor Certificate (Essential) and a deep understanding of health and safety regulations.
  • Current valid Drivers Licence (Essential)
  • Restricted Drivers Authority or ability to obtain (Valid Drivers licence and at least 3 years clean driving record) (Essential)
  • Minimum 5 years' experience in an Executive or Head Chef position in a high-volume, diverse culinary environment.
  • Proven experience in large bakery, wholesale or franchise environment would be beneficial.
  • Demonstrated proficiency in IT systems, Microsoft Word, Excel or equivalent for kitchen management.
